In the fourth quarter of the “Doxology of All the Heavenly Beings,” the word first-born refers to whom? Jesus Christ, the saints, or us?

The confusion comes from the fact that the word in Arabic is plural, al-abkar, while in Coptic, it is singular (starts with "pi" not "ni"... according to the Coptic Reader App).

In this doxology, the first-born refers to the saints (Hebrews 12:23). It is singular in the English Holy Bible, but plural in the Arabic text. First-born mostly likely coincides with all the first-born.
